I know.

This dairy-free, vanilla birthday cake donut is a crazy looking thing.

But you have to admit, it’s the cutest, right?!

Let me tell you about the inspiration here.

The other day I went into a local coffee shop with my kiddo who doesn’t have food allergies.

This shop makes some vegan, dairy-free, egg-free bakery items.

But we can’t trust the nut contamination with my food allergy kiddo being so sensitive.

So anyways,

when I saw their double-layer birthday cake donuts complete with the prettiest pastel sprinkles,

I knew I had to make a safe version for my food allergy kiddo at home,

using our tried-and-true dairy-free and egg-free donut recipe.

The bakery stacked a mini donut on top of a regular donut.

But I don’t have a mini donut pan.

So instead, I stacked a mini MUFFIN on top of the donut.

It was made with the donut batter and turned out just perfect.

Plop a little candle in the top for someone’s birthday, and there you go!

BAKED VANILLA CAKE DONUT

We are super excited about adding this to our donut recipe line-up…

because we’ve never posted a vanilla donut recipe before even though I’ve been making them for years.

Even if you don’t want to mess with the double-layer donut idea,

you can still make this recipe for regular vanilla donuts.

Easy!

And again, it’s egg-free in addition to milk-free, which is pretty sweet for our egg allergy friends.

EGG ALLERGY

Even though there are a couple companies that make dairy-free donuts we can buy frozen…

they both contain egg.

So our dairy-free and egg-free donut recipes are the way to go if you also have egg allergies.

If you don’t have egg allergies, however, feel free to use egg in our recipe.

My son prefers my homemade donuts to store bought ones, any day.

So with this recipe, you are set either way!

Egg allergy or not, this recipe is the best.

In fact, my kiddo chooses homemade donuts for his birthday breakfast year after year.

BEST DONUT PAN

If you want to try this recipe pronto but don’t have a donut pan (affiliate) on hand,

you can easilymake these in a muffin tin or mini muffin tins.

But when you and your kids become obsessed with homemade donuts,

do be sure to grab yourself a nice donut pan.

You won’t regret it, so much fun!

But only if you get a good one.

The donuts will pop right out, no tearing them out with a plastic spoon.

And clean-up is a dream!

These nice, heavy duty aluminum pans are covered with silicone, not teflon.

Now here’s the vanilla donut recipe!

VANILLA BIRTHDAY CAKE DONUTS MILK & EGG FREE

Makes 8 double-layer donuts or 12 regular donuts

Oven 350

VANILLA CAKE DONUT INGREDIENTS

2 cups flour
2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup sugar
1 teaspoon nutmeg (don’t leave this out)
1 teaspoon salt
4 tablespoons solid coconut oil or dairy-free butter
1/2 cup dairy-free buttermilk (1/2 cup dairy-free milk + 1/2 tsp. lemon juice or vinegar)
1/2 cup dairy-free yogurt or canned coconut milk
2 teaspoon vanilla extract
2 flax eggs (or 2 eggs)
sprinkles

HOW TO MAKE VANILLA DONUTS

Lightly grease a donut pan. No need to grease USA pans.

Preheat oven to 350

Make the dairy-free “buttermilk” by mixing 1/2 cup dairy-free milk with 1/2 tsp. lemon juice or vinegar. Set aside.

If making these egg-free, make your flax egg by mixing 6 tbs. water with 2 tbs. ground flax seed. Set aside.

In a large bowl or your Kitchen Aid mixing bowl combine 2 c. flour, 2 tsp. baking powder, and 1/2 tsp. baking soda.

Next, whisk in 1 c. sugar, 1 tsp. nutmeg, and 1 tsp. salt.

Add in 4 tbs. solid coconut oil or dairy-free butter until the flour becomes coarse crumbs. The Kitchen Aid Mixer(affiliate) on a low setting works great for this.

In a separate bowl mix together 1/2 c. buttermilk, 1/2 c. yogurt or coconut milk, 2 tsp. vanilla, and 2 egg or 2 flax eggs.

Pour the wet ingredients into the flour mixture and mix until just combined. Don’t over mix.

Use a spoon to fill 8 donut wells 1/2 full and 8 mini muffin or donut wells 1/2 full.

Bake until doughnuts spring back to the touch. Start at 10 minutes.

Let cool before glazing.

DONUT GLAZE RECIPE

INGREDIENTS

2 cup powdered sugar
2 tablespoons water

DIRECTIONS

In a bowl, whisk powdered sugar and water.

It should be drizzle consistency.

If it’s too thick, add 1/4 tsp. of water at a time until drizzle consistency is reached.

Drizzle over cooled donuts.

Or dip donuts into the bowl of glaze, top side down. Just covering the top of the donut.

Add sprinkles before the glaze hardens. (optional)

Also stack the donuts and mini muffins/donuts before the glaze hardens.
