Gluten Free Meatballs
After our household went gluten free, it became a challenge to replicate all the dinnertime classics we once enjoyed. Meatballs were high on the list of must-have gluten free recipes.
I decided to start from scratch and streamline this recipe to make it even easier to whip up on weekdays. There’s nothing like a hearty dish of spaghetti and meatballs to perk you right out of a midweek slump.
I like to use Certified Angus Beef® brand for ground beef. I first encounteredCertified Angus Beef ® brand while dining out; it was the featured ingredient in a spectacular hamburger. Ever since then, I’ve sought it out to use in all my favorite beef recipes, like this New York Strip Roast or this Steak and Egg Breakfast Bowl.

Ready to bake
You’ll findCertified Angus Beef ® brand ground beef made from a variety of cuts, with varying fat content, depending on the retailer. Ground sirloin is my favorite, but ground chuck works great, too.
Since gluten free breadcrumbs can be expensive, hard to find, and lacking in flavor, I make my own crumbs out of gluten free crackers. Gluten free table crackers provide structure and a touch of flavor, and they’re an item I almost always have on hand in the pantry.

Parmesan cheese adds a savory touch to the meatballs, too. Feel free to use pre-grated Parmesan cheese or grate your own from a wedge of Parmesan.
These gluten free meatballs are fantastic served on gluten free spaghetti or piled high on a gluten free bun to make a meatball sandwich. They keep well, so much so that they might just taste even better the next day!

Ingredients
- 1/3cupgluten free cracker crumbsI used table crackers (they look like saltines)
- 2teaspoonsItalian seasoning
- 1/4teaspoongarlic powder
- 1/4teaspoonsalt
- 1/3cupgrated Parmesan cheese
- 1poundCertified Angus Beef ® brand ground sirloinor ground chuck
- 1/3cuptomato sauce
Instructions
Preheat oven to 400°F. Mix together the cracker crumbs, Italian seasoning, garlic powder, salt, and grated Parmesan cheese. Set aside.
In a large mixing bowl, combine the ground sirloin and the tomato sauce. Mix until the sauce is evenly distributed through the beef. Then, mix in the cracker crumb mixture until it is evenly distributed through the beef.
Form meatballs approximately 1 1/2 to 2 inches in diameter. You should end up with about 12 meatballs. Place the meatballs evenly in a baking dish so that they are not touching. (You can line this baking dish with parchment paper to prevent sticking, if desired.)
Bake for 20 minutes at400°F, or until the internal temperature of a meatball measured with an instant read thermometer equals160°F or greater.

As always, check all ingredients used to ensure that they are gluten free.
Makes 12 meatballs, equivalent to 4 servings. Cooked gluten free meatballs can be added to gluten free spaghetti and sauce to make spaghetti and meatballs, or served on a gluten free bun and topped with mozzarella cheese to make gluten free meatball subs.
